I don't think I understood a couplet of 'A Bag of Moonshine', and was further flummoxed by the illustration of the dejected infant son and smug looking father. :S And I haven't the foggiest what a Backerlash is.

Harry Cap and the Three Brothers was amusing, particularly the illustration of the thieving Inn-Keeper's daughter getting paddled (that sounds terrible, but it's well deserved Schadenfreude).
And I had a bugger of time trying to find out what "a plate of black seam" was (it's not a fish. It's (I think) a cut of tripe... though why black, I can't say. Charred?). I agreed with the roast and spuds and puds, though. :)

The wicked sparrow one was alright, I guess.
I think I hate folktales, is the problem. It's the same as The Revenge of the Black Cat and Other Swiss Folktales - they're unfinished remnants of half-baked stories, best used as writing prompts by capable authors who can put meat on their bones.
I don't know why Garner didn't flesh these out.
