I fulfilled my craving for mac & cheese. I just mixed cheese (ricotta, cheddar, mozzarella) with buttermilk on the stove top.
Idk I may keep mac & cheese unhealthy. After tonight I won't be craving any more 😂

My issue with pure mac & cheese is that it makes me sleepy. I'm not afraid of carbs, but the carbs + cheese as the only ingredients makes me feel too sleepy. I'm wanting off-beat ingredients, maybe mac & cheese w/ ricotta cheese, spinach, mushrooms?
Or squash is in season - squash goes well with cheese, I could see disguising it in a puree, it would add some fiber.
