This custard bun recipe is pretty solid. I got some made that definitely werent as good as what I've had at the dim sum place, but were way better than my attempt at these from a recipe blog. That might be on me for steaming them in the rice cooker, but I am wondering if the AP flour (instead of using cake flour as I have seen recommended online) could be why they're not as delicate

I'm going kind of nonlinearly- I've now made the custard buns, milk bread, and Malay cake. I'm pretty happy so far. The custard buns are good but they're not dim sum cart good. I threw the milk bread stuff in the bread machine so it may be my fault that it isn't stringy and feathery, but it is good.
For the Malay cake? It's delicious- if you slather it in salted butter!! The book doesn't tell you that

I'm not sure I've ever counted a cookbook towards my reading goal before, but this is full of information beyond just plain recipes and it's already cleared up a lot of confusion I faced on my first (kinda failed) attempt to make milk bread. I can not wait to give that and custard buns another try!!
