Raised by a gourmet mother who never measured, I was fortunate to eat mostly whole foods as a child, and little sugar. I began cooking in earnest when I was 12. My own auto-immune diseases (I've had 3) and additional health struggles changed the course of my cooking from gourmet and vegetarian to Paleo/GAPS~ grain-free, sugar-free, high fat and frankly, very satisfying!

Once my family began the GAPS Diet, 4+ years ago, I found success with experimental baking. My kids were so satiated and excited by what I made, as was I, we altered the focus of our kefir-based ice cream shop. I, too, do not like almond flours, nor think they are as healthy as they are touted to be. My cookbook does not use store-bought almond flour at all. It does teach how to soak and sprout nuts, occasionally almonds. The technique I've developed is easy and creates a great texture. I am happy to say that I think you will enjoy these recipes. Yes, waffles, pancakes, muffins, breads etc. If you choose to buy it, may it truly be helpful. That is my goal; and that is what the recipes have done for our family. Cheers and best, Megan(less)
