People ask me very seriously, "What is California cuisine?"...I tell them very seriously, "It's what we've always had, but we're just more aware of it now"...I think it's wonderful to be simple. In fact, I get simpler as I get older. I think some people take food much too seriously and too pompously. Craig Claiborne said to me he gets bilious when he goes to San Francisco because people talk about nothing but food...They get kind of carried away."
