Introducing the “Elizabeth Sponge”

This weekend saw the nation celebrate Her Majesty The Queen’s 90th Birthday with events including Trooping the Colour and The Patron’s Lunch. With that in mind and with one of the nation’s favourite cakes being the classic Victoria Sponge, named after the famous monarch I thought I’d give it a QEII twist. So to celebrate the 90th birthday of Her Majesty Queen Elizabeth II, Britain’s longest reigning Monarch, I’ve created the Elizabeth Sponge – a summery and elegant twist on the classic Royal cake. Happy Birthday Ma’am.
The cake was served as part of Will’s Royal Afternoon Tea at The Capital Hotel in London, exclusively for the Birthday weekend.
For the cake:
225g unsalted butter, softened, plus extra for greasing tins
225 g caster sugar
4 large eggs, lightly beaten
1 teaspoon vanilla bean paste
Zest of 2 lemons
175 g plain flour
2 teaspoons baking powder
a pinch of salt
2-3 tablespoons milk
1tsp dried lavender
For the filling:
150 g unsalted butter, at room temperature
200 g icing sugar, plus extra for dusting
Juice of 2 lemons
3-4 tablespoons good quality lemon curd
To finish:
fresh lavender
rose petals
candied lemon (availiable online or from good quality supermarkets)
You will also need 2 x 20 cm sandwich cake tins.
Preheat the oven to 180ºC/375ºF/gas 4. Butter and line the base of each cake tin with a disc of buttered baking parchment.
Cream together the softened butter and caster sugar with the lemon zest until really pale and fluffy, this will take about 5 minutes. Gradually add the beaten eggs, one at a time, mixing well between each addition and adding a little of the flour if the mixture should look curdled at any stage. Sift the flour, cornflour, baking powder and a pinch of salt into the bowl, add 2 tablespoons of milk, dried lavender and mix again until smooth. Divide the batter evenly between the prepared tins and bake on the middle shelf of the preheated oven for about 30 minutes until pale golden and a skewer inserted in the middle of the cakes comes out clean. Cool in the tins for 5 minutes then turn out onto a wire rack until completely cold.
To make the filling, using a free-standing mixer cream the butter until very soft and pale, gradually add the sifted icing sugar and lemon juice mixing well between each addition until pale, smooth and very light. Place the buttercream into a piping bag fitted with a plain nozzle. Pipe the buttercream around the cake leaving gaps to fill in with lemon curd. Pipe the remaining buttercream on the top. Sandwich the cakes together. Finish with crystallised lavender, candied lemon and some white or yellow rose petals.

Will judges Mövenpick Gourmet Dessert Chef 2016

Mövenpick Ice Cream Gourmet Dessert Chef of the Year 2016
Earlier this week, Will hosted and judged the Mövenpick Gourmet Dessert Chef of the Year which saw Alice Peel from Sodexo being named annual Gourmet Dessert Chef of the Year having triumphed at a live cook off at the Good Housekeeping Institute in London.
The live cook-off saw chef de partie Peel go head to head with Cheal’s of Henley pastry chef Howing Lai, Robert Stordy, lecturer in culinary arts at Derby School of Hospitality, and Hannah Ward from Whisk and Spoon Catering.
They were all tasked with creating a dessert putting a contemporary twist on the classic ice-cream sundae. 
Impressed by Peel’s well-matched flavours, the four-strong panel of judges awarded her strawberry, lime and Champagne sundae as this year’s star dessert.
She said: “I’m honoured to have been crowned the winner of Mövenpick Ice Cream’s Gourmet Dessert Chef of the Year competition. I worked hard to make sure the taste of Mövenpick was a real focus and thought about my presentation in-depth. I’ve always loved strawberry and lime as a dessert pairing and, combined with a little fizz, thought it’d give my sundae a lovely summery taste.”

Peel will showcase her winning recipe at Taste of London, as well as receiving VIP tickets to the festival, spending money and a two-night stay at a four-star London hotel.
Led by head judge and compere Will Torrent, all recipes were analysed by mixologist Lee Hyde, The Caterer’s products and suppliers editor Lisa Jenkins and last year’s Gourmet Dessert Chef winner and chef at the London Marriott Country Hall hotel Biju Joshwa.
Torrent said: “We were really impressed by the enthusiasm and attention to detail shown by all four of this year’s finalists. For us, Alice’s strawberry, lime and Champagne sundae was the clear winner, thanks to its beautifully balanced flavours and superb presentation. Alice successfully made the Mövenpick Double Cream & Meringue Ice Cream the sundae’s hero, complemented by the fruity bite of the strawberries, lime and fresh Champagne. It was a truly stunning summer sundae.”

Big Church Day Out helps raise millions of meals
FESTIVAL-GOERS HELP PROVIDE MORE THAN A MILLION MEALS TO FIGHT EXTREME HUNGER THROUGH TEARFUND DISASTERS APPEAL

Tearfund, an international development charity, will help provide 1,066,530 meals to people suffering extreme hunger, and support them to go on to lead more secure and fulfilled lives, thanks to the generous contributions of Big Church Day Out festival-goers in Sussex. The annual music festival brought together more than 22,000 Christians from across the world for one of the biggest events on the church calendar, featuring contemporary Christian bands and entertainment for the whole family.
‘Disasters reduce people’s ability to live safely and have an impact on health and a family’s ability to earn a living,’ said Steve Adams, Tearfund’s Head of Global Brand and Communications. ‘We are grateful for the generous response of festival-goers to the campaign, which will help communities affected by the complex consequences of disaster.’
Tearfund continues to work to relieve the suffering of people in the Sahel region in Africa through interventions such as long-term support for livelihoods, farming and self-help groups, alongside emergency food aid. The organisation is currently appealing for funds through its Give Like Jesus campaign.
In Chad, one of the world’s poorest countries, seasonal rains have been inadequate and consequently farming has been less fruitful in the last year. When crops fail, families have nothing to fall back on. Another country in the region, Ethiopia, has been affected by drought while recent erratic rains and El Niño have resulted in two failed harvests and 10.2 million people in need of emergency food assistance.

Tearfund ambassador and award-winning chocolatier and pâtissier Will Torrent visited Ethiopia in April to see Tearfund’s work. At Big Church Day Out, Will gave festival-goers a teff crêpe baking masterclass. He had been introduced to teff – a gluten-free Ethiopian grain and staple ingredient – during his visit to the country. Before his baking demonstration he spoke of Amarech, a mother of seven, who he met during his visit.
Amarech’s husband had left to work as a migrant worker in another country, leaving her to raise her children alone. The region’s erratic weather patterns resulted in desperate times for her family.
‘We were in darkness,’ said Amarech. ‘Our lives were difficult and we borrowed from lenders at high rates when we faced emergencies.’ It was thanks to joining a self-help group supported by Tearfund that she was able to improve her circumstances.
‘With the self help group, we know how to better manage our resources – seed, grain and money. We save for difficult days,’ said Amarech.
Will commented: ‘It was incredible to see how Tearfund works through local churches to unlock people’s potential and in doing so, helps them discover new ways to help themselves. The self help groups in particular are clearly having a very positive impact on communities in Ethiopia. Seeing the support for Tearfund’s Give Like Jesus campaign this weekend made me realise there are thousands of generous people with a real passion to help others like Amarech.’

Tearfund calls on visitors to support their Disasters Appeal ‘Give Like Jesus’

Tearfund is calling on Big Church Day Out festival-goers to provide a million meals for people facing extreme hunger and help them to go on to lead secure and fulfilled lives. The annual music festival brings together more than 20,000 Christians from across the world for one of the biggest events on the church calendar, featuring contemporary Christian bands and entertainment for the whole family including Matt Redman, Tim Hughes, Kings Kaleidoscope, Guvna B, Jesus Culture, LZ7, Phil Wickham and many more!
Tearfund continues to work to relieve the suffering of more than 20 million people in the Sahel region in Africa and is raising funds for this through its Give Like Jesus campaign. Political instability, the impact of a changing climate and recurring droughts have resulted in a region suffering food insecurity and malnutrition.

Jumana from Hillé Bar village near Dabkere, Chad, collects water from the dry ground. Climate change is hitting Chad hard with erratic and exceptionally high temperatures and a lack of rainfall. Her millet which she grows to survive has dried out and has stunted growth. The crop is ruined and Jumana and her family are facing extreme hunger. Tearfund visited Chad to tell the story of families who have been affected by the current food-security crisis in Niger – and helped find a way through it.

Tearfund Ambassador and award-winning chocolatier and pâtissier Will Torrent visited Ethiopia in April to see Tearfund’s work responding to the crisis. The international charity is working with Ethiopian church-based partners and supports more than a million Ethiopians through its self-help groups programme.
These self-help groups are one of several interventions implemented by Tearfund to help mitigate against the ongoing hunger crisis. In Chad, for example, the range of interventions include market gardening, seed provision, irrigation schemes and food aid.
During his visit to Ethiopia, Will witnessed first-hand the impact of self-help groups in helping people prepare and cope with the often complex effects of disasters, such as by securing an income through setting up a small business.
At Big Church Day out on Saturday 28 May, Will will talk about his trip to Ethiopia and encourage support for Tearfund’s Give Like Jesus’ campaign . He will also give a cooking demonstration making crêpes with teff – a gluten free flour that is a staple ingredient in Ethiopia.

Will set to join Glynn Purnell for his Friday Night Kitchen
Pastry chef, chocolatier and the author of the best selling Afternoon Tea at Home, Will Torrent will be joining Michelin starred chef Glynn Purnell and X-Factor winner Sam Bailey Glynn Purnell’s Friday Night Kitchen on October 7th 2016 at Villa Park’s Holte Suite.

The chef who has worked with the likes of Heston Blumenthal, Jamie Oliver and James Martin will join ‘Yummy Brummie’ Glynn on stage and will provide delicious petit fours for the 400 guests at the prestigious Midlands venue.
Tickets are now on sale for the fun-filled, live show-cooking event that over the last two years has gained the reputation of being the best Friday night out in the Birmingham social calendar. Award-winning presenter Suzanne Virdee will host the evening alongside Heart West Midlands presenter Ed James. The night will include on stage guests discussing and cooking their favorite dishes with Glynn before the audience enjoy the dishes themselves.
The event, which is in aid of blood cancer charity Cure Leukaemia, has raised over £100,000 in the last two years and the former ‘Young Chef of the Year’ and Acorn Scholar, is excited to be a part of it: “I’m delighted to be creating some fun and tasty chocolate treats for Friday Night Kitchen along side Glynn and his team – its going to be a fantastic night and sure it will eclipse last year’s £60,000 total for such a good cause!”

Will joins National Committee of The Craft Guild of Chefs

During the AGM, the national chairmanship was passed over to Lee Maycock from previous chair Christopher Basten. Ian Nottage takes over as national vice chairman and Jane Johnson becomes national treasurer.
A former Craft Guild of Chefs award winner and host of the National Chef of the Year competition (which is organised and run by the CGOC), Will was elected onto the committee and commented: “I’m incredibly honoured to be have been elected onto the committee for the Guild in what looks to be an exciting time moving forward with the election of new Chairman Lee Maycock. I’ve got to know Lee over the past few years and have always been blown away by his commitment and passion for the Guild. The future certainly looks bright.”
Established in 1965 as a Guild of the Cookery and Food Association, the Craft Guild of Chefs has developed into the leading Chefs’ Association in the UK and has many members worldwide. Members come from all aspects of the foodservice and hospitality sectors working in a wide variety of positions from students and trainees to top management. No other association boasts such a broad and experienced membership.
Nominated by the membership and ratified by the Vice Presidents’ Council, the honours and awards are made annually for the previous year and this year’s roll call included more than 60 recipients.
Amongst the recipients was Ian Parsons from Lockhart Catering Equipment, who was awarded the Chairman’s Award for extraordinary service to the Guild and Fishmonger’s Hall, which received the President’s Trophy for outstanding food and service.
The Order of Merit, which is the highest award given by the Vice Presidents’ Council for meritiorious and outstanding service in furthering the aims and objectives of the Guild over a minimum of 20 years was awarded to Steve Munkley.
The Special Award, also given by the Vice Presidents’ Council in recognition of achievements made in promoting the aims and objectives of the Craft Guild was awarded to Alan Dewberry.
The Chairman’s Shield was awarded to Westminster Kingsway College and Omero Gallucci was named the National Hero, for his tireless work promoting the Guild’s ethics.

Special Afternoon Tea menu to celebrate Her Majesty the Queen’s 90th Birthday
To mark Her Majesty The Queen’s 90th birthday, Michelin starred Outlaw’s at The Capital will be serving a month long Royal Afternoon Tea created by two great British Chefs, Nathan Outlaw and Will Torrent. Nathan and Will have put together an exciting menu of Great British Afternoon Tea favourites, featuring recipes from Will Torrent’s latest best selling book, Afternoon Tea at Home, as well as exclusive recipes created collaboratively at The Capital by Nathan and Will. The Capital Royal Tea will be available for the entire month of June, where Will will be taking a Royal Residency at The Capital as a guest chef alongside Outlaw’s at The Capital’s Head Chef, Tom Brown.

Will, who is the pâtisserie and chocolate consultant to Waitrose has already turned his hand to royal events, having helped design the Diamond Jubilee Picnic Hamper alongside Waitrose, Heston Blumenthal and Royal Chef Mark Flanagan. He will be bringing his passion for baking, chocolate, and all things sweet to make Afternoon Tea at The Capital during his Royal Residency extra special in honour of the Queen’s birthday celebrations.
The menu plays on Will and Nathan’s love for Great British Food and firm afternoon tea favourites with a few twists along the way. The menu will include Earl Grey Crowns, which have been specially created by Will to feature The Queen’s preferred tea, strawberry and Champagne tartlets decorated will gold leaf detail, and smoked salmon on crumpets. On Sundays the cake trolley will add an additional treat, such as their version of the Duke and Duchess of Cambridge’s chocolate biscuit Wedding Cake, or an Elizabeth Sponge cake; a take on the classic Victoria sponge with notes of lavender and lemon. Fiona Cairns, Royal Cake Maker has enthused ‘Will is a master of his craft, his recipes are amazing and I’m a huge fan!’
Nathan Outlaw has said of the collaboration: ‘We loved the creativity of Will Torrent’s bakes, and this menu has been a lot of fun to put together. We can’t wait to share our Best of British Tea, and toast the Queen’s milestone birthday!’
Will adds: ‘I can’t think of anything more quintessentially British than Afternoon Tea to celebrate Her Majesty the Queen’s 90th Birthday. It’s amazing to be working with Nathan Outlaw at The Capital in honour of this Great British occasion- what a way to celebrate!”
The Royal Residency Afternoon Tea will be available daily 2-5.30pm throughout the month of June, with private rooms available for larger groups. Afternoon Tea is priced at £29.50 per person, or £39.50 paired with a glass of Champagne or even a Dubonnet and Gin, a royal favourite.

Coffee in Ethiopia & Cakes, Bakes & Faith
The launch of his book Afternoon Tea at Home kicks off an exciting year for Will Torrent, who will be travelling to Ethiopia in March with international development charity Tearfund.
Ethiopia has a rich culinary culture but the country is currently also facing drought and food shortages. Will is going to see Tearfund’s work to reduce the impact of this crisis, both through emergency aid and by helping people make their own longerterm preparations to ride out the lean times.
He will also have the opportunity to experience some ancient Ethiopian food traditions.
Flour ground from the seed of the annual grass teff has a newly acquired ‘superfood’ status among Western food lovers. Teff is hard to cultivate, and for centuries has been a wellkept secret in Ethiopia, where it finds its ideal growing conditions. Teff flour is used locally to make injera, a leavened bread similar to a pancake and a staple of the Ethiopian diet.
Will has been invited to a masterclass to learn how to make injera, and hopes the experience will spark some recipe ideas using teff flour.
He will also be able to take part in the famous Ethiopian coffee ceremony, and as a chocolatier, this is certain to inspire Will to think of ideas to marry the two flavours.
Will says: “This is one of the most exciting yet nervewracking projects I have ever been blessed with. I just can’t wait to see the amazing work that Tearfund is doing in Ethiopia. I’m not sure what to expect, but I know it’s going to help me to grow as a person and to deepen my faith.”
On his return to the UK, Will is joining Martha Collison (Tearfund ambassador and youngest ever contestant on BBC TV’s The Great British Bake Off) on their Cakes Bakes and Faith tour.
