Kale Cake with Blueberry Frosting (From Ann Crile Esselstyn and Jane Esselstyn’s The Prevent and Reverse Heart Disease Cookbook)

4 C raw kale, stripped, chopped and cooked (after cooking, yields 2 C kale)

1 C pure maple syrup

2 tsp vanilla extract

½ C unsweetened applesauce

2 Tbsp apple cider vinegar

¾ C water

3 C white whole wheat flour (I used whole wheat)

2 tsp baking soda
