I can't think of any whole books to recommend and add to the list, but look for Stanley Kunitz's "Wellfleet Whale" and Richard O'Connell's "Shoal of Sharks" and also check out Linda Hogan and Mary Oliver, who are wonderful poets. They write often about the natural world and sometimes that includes watery creatures/settings.
