This is such a hard question! There are quite a few fictional characters that I really love. One couple that stands out in my mind is Adam Hauptman and Mercedes Thompson from the series by Patricia Briggs. Another favorite is Hugh and Delaney in the Nocturne Falls series by Kristen Painter. These are series worth reading over and over again. I love these couples because they're not perfect. They make mistakes, they make up and they have BIG love that conquers all.
