This is a tough one. For me, it's less the actual couples and more the process of the characters falling in love that gets me. If I have to choose, my answer surprises me: Elizabeth and Darcy in Pride and Prejudice. I'm not a Janeite but these two are better together than apart, and I love how they come together.
