Still trying various things to get the rise better. loaves are still coming out dense. tried steam tray with cast iron pan today and the crust was incredible! so slowly levelling up my gf game.

Having problems with dense loaves still. Tried to get my bread to continue to rise today and it was a no-go. It's like everythign is half-risen and REALLY frustrating. Might try to make something other than baguette and report back.

God I can't wait to really dig into these recipes. Once my paycheck comes in, I'm buying flours again to try out every recipe I can in this book. I love baking bread & I have a gluten intolerance that's apparently gotten pretty bad. This book has a whole baking system & it's AWESOME and makes baking more accesible for everyone- especially if you suffer from having chronic illness and you need to do things in stages.
