impasto più friabile = grassi a temperatura minore e più proteine

tutto ciò è basato dal permettere all’impasto di formare o meno il glutine. Proteina che si crea tra farina di grano e liquido, grazie alle proteine del frumento e a tanta lavorazione. il sale aiuta la maglia glutinica.
