Only a few pages into the chapter on Great Plains culinary traditions while I have salsa simmering on the stove. This is gustatory torture.

I feel like I'm cheating on North Carolina when reading this book. Picking the book back up and reading just a couple of stories, I want to be back home, roaming the plains and talking to neighbors instead of looking up the history of Confederate statues stationed around Raleigh's Capitol building. Yeah, the plains sound much better.

Taking a break after the prologue. This is a book to savor ah, like a fine wine, or better like a pork chop from a pig allowed to roam, root up the soil, maybe eat chokecherries, maybe root up grandmother’s garden knowing the roots of flowers so carefully tended had to be good. A pig with terroire. Will do notes as I enjoy Tom’s vignettes. Tom is already evoking memories of Plainsfolk. My friend can write.
