Status Updates From I Can Cook Vegan

i’m LOVING these recipes. i’ve been wanting to go plant-based and mainly whole foods in the home but was really intimidated by vegan recipes. this book makes super attainable and relatively affordable vegan recipes that are an absolute hit. i made the vegan pesto for a potluck and everyone was totally obsessed. plus, the recipes make 6 servings so perfect for meal prep!

Welp, it is nearly the end of 2021 and I did not manage to cook each recipe in chronological order as I had planned, or cook at all. Isa had set up the chapters as building blocks so that each one introduces a new skill and I got reallyyyy stuck on ch. 2 because I HATE SALADS. Today, I am going to allow myself to SKIP over to ch. 3 (sandwiches) and go out Right Now to make myself a tempeh beet reuben no matter what!
