'Sautéed Summer Squash' was fine, I accidentally added a bit too much lemon because I didn't think the juice from one would be enough, so my squash turned out a bit too lemony (oops!). A little goes a really long way. The only thing I would gripe about with this recipe is the way you prepare the squash. Peeling it into ribbons and discarding the core is too wasteful in my opinion. Trying 'Pan-Seared Steak Tips' next.

Herbed Spinach Dip was divine! Easy to follow recipe and easy assembly, and on top of that, the recipe itself is fun to play with. Don't like dill? Add chives. Can't have hot sauce? Add a bit of crushed red pepper. Everything blended together very nicely and the consistency was perfect! Four more recipes to try. Sautéed Summer Squash is next. I'm really pleased with how much fun I'm having.

So with the hustle and bustle of the holidays I didn't have a chance to try the 'Spring Vegetable Soup' until now. Pretty darn good! Couldn't add asparagus due to an allergy, and I used store-bought pesto instead of the recipe in the book, but all in all it was tasty, quick, and easy! The radish and parmesan topping was genius. This one's a keeper. I'm trying the 'Herbed Spinach Dip' next.

Chicken in Foil was meh. I hate to say it but my advice would be to use store bought pesto instead of making the stuff instructed here. Most of anything I tasted in this dish was salt. I know I used the correct amount, so I don't know what happened. I think it had everything to do with the pesto. I'll try the Spring Vegetable Soup next; we'll see if that's any better.
