First time I ever spatchcocked a turkey (though in the book it's called butterflying), and it was relatively easy with the guide in here. Individual steps with pictures - and small mentions of what might get difficult - sure helped a lot. And then a recipe specifically for how to cook it in that style, turning out perfect. Excellent start!
