Schatzker is a little contradictory in some of his explanations, letting his own personal opinions get it the way here and there.
For example, he goes on and on about how food needs flavor: garlic and paprika and chile oil etc.
However, when it's a "tattooed twenty something" adding these flavors to foods, they're "potheads".
