Chapter 3 was on taste hierarchy, considering popularity of cuisines determined to be foreign vs ethnic (French is an example of foreign because there isn't a huge ethnically French population relative to the popularity of its food in higher end spaces), as well as how perception of the populations goes into it (thinking about the "you love our food but don't love us" aspect of anti-Asian racism)

Chapter 2 was an interesting comparison of two South Asian restaurants in New York City, along with thoughts about the history of Indian restaurants in the city (how they are classified/categorized, menu homogenization or trend chasing across cuisines, the kinds of names entrepreneurs use to attract customers who may or may not be regular with the culinary concept).
