This book is an unexpected treasure! I got it on a whim, because I like watching WORST COOKS IN AMERICA. (I like watching people go from klutzes to pretty-skilled in the kitchen.)

I didn't expect that the mantra, tool, and life-skill of chefs from the CIA, the mise-en-place, would be useful to me. It is! I need to reread this, but every chapter has contained something that is practical.
