Much to be learned from this one. Love the approach: Connecting food to evolution & demographics. Like, describing symbiosis between Food & Humans. Can't help but think of how quickly & unquestioningly folks digest (inject) stuff into their bodies without any consideration for their own unique genetic dispositions...as if all human bodies respond uniformly & safely to a food or a drug (or a vaccine...)
