Did a speed read of this cook book (all 600 pages, people) and thoroughly enjoyed it. Learned some new techniques. Does not beat out SALT FAT ACID HEAT by Samin BUT does deserve an honorable mention…if you find an old used copy it’s worth snagging it if you’re a cook book fan.
