Busy, mostly fun, weekend! Friday we went to see Wizard’s mom. We hung out with her, played cards, and had lunch together.

The rest of Friday and Saturday we were prepping for BLB’s birthday. By “we” I mean me Saturday was one of those days where everything took longer than it should, and I had to go to multiple stores to get things I needed. Nothing bad, just everything like slogging through thick mud to get it done. But I got the roast cooked and shredded for enchiladas, made the cake layerss, and formed the dairy free ice cream into a cake layer.

Sunday, I got an early start expecting to run into more issues. Nope, everything went as it should. I make two pans of enchiladas (regular cheese and dairy free cheese) and put those in the fridge. I then pulled out dairy free whipped cream and whipped it with powdered sugar, vanilla and some cocoa powder. I was dubious that this would work as I’ve never tried this, but it turned into a whipped cream icing. It wasn’t super stable, but workable. I stacked the cake and ice cream rounds, then quickly got a coat of frosting on it and put it back in the freezer. A half hour later, I did a second layer and finished the cake. I’m shocked it worked! It’s not super pretty but it worked well enough for my first dairy free ice cream cake. Here’s a couple pics:

It’s chocolate cake layers with mint chocolate chip ice cream in the center. I really wanted the lighter whipped cream icing on it, rather than buttercream that turns rock hard when frozen. BLB loved it! Now his wife and Wizard want ice cream cakes for their birthdays We had a great time together hanging out, eating dinner, and having cake. Maggie loved having some of her favorite people over too. Oh and Wizard did some card tricks. He’s been teaching himself magic — sometimes he makes it work, sometimes he doesn’t As long as everyone’s having fun, that’s what matters.
