So Weil was chiefly a vegetarian but now pescatarian so recipes reflect that. Really enjoy learning about the health benefits & sustainability aspect of fish & bison. His favored beef due to sustainability & health implications (lower fat) even though he doesn’t eat it himself.
I prefer bison when making chili for the simple fact that it doesn’t require being drained at all - the fat content is so low.

Since the basics of Mexican cooking is a staple in our hispanic family, I was eager to first try the Scrambled Tofu Wraps that feature soy chorizo with tofu. Normally we make breakfast burritos with chorizo, eggs, and potatoes. I was surprised to find this healthier recipe to be spicier than our standard pork chroizo. In the second attempt I added fried potatoes (olive oil, s&p) and cheese, which offered variety.
