Hm. A menu list that includes the peculiar turkey in jelly and lobster fricassée. These were mentioned a couple chapters ago (the turkey fancified into en gelée) as recipes that'd need to be written down for a low-born cook.
I'm just saying, research didn't turn up other examples...? It's a weird echo.
