DENSE. Just how I like it though. Getting to the real grimy details of how all this food crap works. Understanding concepts makes practice so much easier. It’s easy to follow a recipe but I’m hoping to be able to work with what I have. The introduction is 81 pages tho so I have a ways to go 🙃
